Did you know that there is more than one type of buttercream? Buttercream isn't just the sweet stuff that goes on a cupcake or cake. It is a science. You might be thinking, "Do people actually care about the different tastes of buttercream?" Absoluetly!
There are quite a few types of buttercreams, but I am going to talk about the four most popular. The top four are:
1. AMERICAN - American Buttercream is made with butter, powdered sugar, and vanilla or flavoring of your choice. It is the most basic of buttercreams. Living in the great hot state of Texas, we have sometimes substituted out the butter for vegetable shortening to help prevent the melting of beautiful cakes. This buttercream is sweet!
2. SWISS - Swiss Meringue Buttercream is made with egg whites, granulated sugar, butter, and vanilla or a flavoring of your choice. This buttercream is my favorite. It is smooth, silky, decadent and not overly sweet. It does take a stand mixer and some patience to make it. The process starts by hand mixing the egg whites and granulated sugar in a bowl over simmering water. Once the mixture hits a certain temperature you remove from the bain marie and start whipping them until they cool to room temperature and transform into a gooey marshmallow like texture. Once the egg white/sugar mixture is cooled, you can slowly add the butter. This is the nail biter part! If the egg mixture is too warm and you add the butter, it becomes a soupy mess. But it can usually be fixed.
I have had many a call asking for the whipped icing that you usually find in the local grocery stores. People ask for this because that is what they have always had and why not stay with what you know, right? sure, but you can always try new things.
